Grape Varieties:

Pinot Noir           65%

Chardonnay       35%

Winemarking:

The grapes are hand-picked at optimum maturity.

They are gradually pressed to prevent the juice being coloured by the skins of the Pinot Noir grapes.

Alcoholic fermentation is accomplished slowly in thermo-regulated stainless steel vats to preserve the unique characteristics of this exceptional parcel of Pinot Noir, followed by malolactic fermentation.  

There is no addition of liqueur (or sugar) at disgorgement, allowing this champagne the freedom to express its full personality and authenticity.   

Tasting notes:

Beautiful light yellow color, fine bubbles.

The nose has a great complexity dominated by candied lemon and white flowers.

The palate, of great minerality, reveals notes of vanilla and toasty, which give this harmonious wine a whole intensity. The end of mouth is elegant and has a great precision.

Tasting temperature: 8 to 10 ° C

Serving suggestions:

A champagne, both pleasure and gastronomy that can be served as an aperitif, at the table associated with seafood, shellfish or fish.
